If you wanted to make an old-fashioned new fashioned, you could use a syringe to inject the cocktail into a hollow egg of ice, which you would then shatter before quaffing. Seriously? Yes, quite. In the Rocks is just one of the 25 or so inventive cocktails ($12–$20) coming our way when The Aviary, the high-concept lounge from chef Craig Schoettler and the Alinea crew, opens April 1st next door to Next.
