Finding pistachios without the shells is worth the effort. Our recipe tester says shelling pistachios took her the better part of an afternoon.
Preheat oven to 350 degrees Fahrenheit. Mix together the butter, honey, half and half, and vanilla. Set aside. Mix together all dry ingredients. Mix dry and wet together. Scoop teaspoonfuls onto foil lined baking sheet. Spread thin and leave space between, as the cookies will spread; bake no more than nine cookies per sheet at a time.
Bake for about 6 minutes or until golden brown, but not dark. Allow cookies to cool completely; peel from foil. Spread out cookies side by side. Drizzle with melted white chocolate and allow to set. Makes about 42 cookies.
