Small plate–style service makes for easy sharing, but dishes can arrive pell-mell. Essentials: guacamole with fruit of the day, bacon-wrapped shrimp brochetas with chipotle-lime glaze, tacos (perhaps beer-battered tilapia or grilled skirt steak with chorizo), and esquites (grilled corn with Cotija cheese, epazote butter, and lemon aïoli).
