Boehm (Boka Restaurant Group), Japanese cuisine goes from simple (a soy-marinated tuna zuke) to jaw-dropping (dehydrated and then rehydrated Japanese sweet tomatoes presented like a steak tartare). Momotaro jets fish in from Tokyo’s Tsukiji market thrice weekly and prices it accordingly. Ace servers guide you through the menu—a blur of skewers, noodles, sushi, hibachi-cooked items, and ultramodern cocktails.
