John and Karen Shields, veterans of Charlie Trotter’s, Alinea, and Tru, aren’t afraid to get weird (and luxe) in their new standout. From their two prix fixe menus (eight courses, $135; 12 courses, $195), wonderful gonzo creations—such as a beef-fat brioche doughnut paired with sheets of braised cabbage atop caviar, caramelized onions, and sauerkraut—provoke wonder and admiration. The room is gorgeous but relaxed, service pitch-perfect yet casual. Fascinating drink pairings elevate the experience to Chicago’s upper echelon.
