The city’s best new bar is . . . a tiki bar? Didn’t Chicago name a tiki bar the best new drinking spot in 2014, too? Why is this magazine so obsessed with tiki bars?
Yes, yes, and truly, we’re not. But when the legendary bartender Paul McGee (Whistler, Three Dots and a Dash) concocts something this masterful, you can do nothing but pull up a stool and enjoy. This fern-covered cabana is McGee’s best and most personal work to date, a distillation of his ability to make obsessively researched passion projects (ask to see the 275-bottle rum list) that are still seriously fun (yes, that is a dolphin garnish in your daiquiri).
Never fear: You can also score rum-free cocktails here. They’re excellent, as is the house ale from Marz Community Brewing. Round up three of your closest friends, dive into one of the flaming punch bowls, and discover why history repeating itself can be a great thing. 3154 W. Diversey Ave., 773-293-6048
