Check Out Band of Bohemia’s Beet-Thyme Beer

Does the USDA count beet-infused beer as a serving of vegetables? If so, the beet-thyme brew at Band of Bohemia may be the most delicious way to get your daily dose of folate. Head brewer Michael Carroll, who holds the distinction of being the only bread baker ever employed at Grant Achatz’s Alinea, devised the recipe for the Ferran Adrià–inspired menu at Next and refined it for a Polish friend’s wedding. Now at the lovely, large Ravenswood brewpub he opened with fellow Alinea alum Craig Sindelar, you can sip the herb-heavy concoction along with four other culinary-inspired beers (grilled apples in one, orange and chicory in another).
