After 17 years in Chicago, Jason Paskewitz, the bad-boy chef from Queens who flew under the radar at Rustic House and Gemini Bistro, is the master of his own domain: the Blanchard. “French food for the modern diner,” is how Paskewitz describes the menu. That means reinventing centuries-old standards of French cuisine—dishes such as cod au Provençal and rabbit moutarde—with a focus on freshness, herbs, and vegetables.
