Sicilian-born pizzaiolo Elio Bartolotta handcrafts each one, lovingly applying ultrafresh toppings—whether basil, eggplant, mozzarella, mushrooms, plum tomatoes, spinach, or zucchini—and supervising the constant traffic in and out of the oven.
