Critic’s Notes

Chef-partner Brian Ahern, working in a space that feels like an Old World butcher shop, wants you to experience what a Chicago steak joint might have been like a century ago. His fabulous steaks arrive basted in beef fat and carved into impossibly juicy slices. The desserts disappoint, but you will have no trouble filling up on retro thrills in clever new packages, such as fleischschnacka sausage and a dynamic merguez cavatelli.
