“I like simple, classic drinks,” says Telo Dunne, head bartender at Empire Liquors, set to open in September. “Straight up, rocks, maybe a splash of some liquor or soda, and a garnish—those are spirits in my book.” Dunne, 29, earned her bartending chops the old-fashioned way, first by imbibing. “It’s pretty much a watch-and-learn-type job; then it’s all just counts, combinations, and personality,” she says. Her résumé includes stints at Wicker Park Tavern, Darkroom, Sonotheque, Slick’s Lounge, Crobar, and Bungalow. When she’s off duty and wants a drink, she likes “Wicker Park Tavern for a good beer in a frosted mug; Avec for a great bottle of wine; and Coobah if I am in the mood for a mojito or sangría.” And the signature drink she serves? “I pour a mean shot of Jameson,” she says.
