Unlike the spate of new hotel bars with sweeping views (see Cheers, July), Potter’s, in the Palmer House Hilton (17 E. Monroe St.), turns its gaze inward for a boudoir/burlesque vibe with a focus on creative drinks. "We’re bringing back the true art of cocktail-making," says the bar’s John William­son. Options include the Fairytale, made with Malibu Pineapple and absinthe, and the Green Tea, a blend of gin, pear vodka, pinot grigio, fresh mint, and cucumbers (all drinks $12-$15). Williamson even charged the staff with trying their hands at mixology. "There will be a little bit of everything in [my drink], but I’m definite­ly using Godiva White Choco­late Liqueur," said our waitress, Cristina. "And I’m calling it a One Night Stand." Sounds like the perfect fit for a hotel lounge.
