In Chinatown, where many restaurants look identical, this one shines with Shanghainese specialties, such as xiao long bao, pork-and-broth-filled dumplings that demand a whole ritual: Release steam, dress with ginger slivers and vinegar, eat. If the crispy fried whole tilapia is in season, you know what to do.
