Gastón Acurio’s superstar turns out dishes that reflect Peru’s historical dalliances with Japan, China, and Africa. Sharp flavors dominate, whether in ahi tuna tiraditos with passion fruit and honey or rib eye a lo pobre of wet-aged beef slathered in chorrillana sauce. The Lima Llama (pisco, lime, and ginger beer) alone will make you a believer.
