Critic’s Notes

The line forms early at this limited-reservations one-of-a-kind joint for Macanese cuisine, a clever amalgamation of Portuguese, Cantonese, and Indian flavors that blends briny, sweet, and acidic notes to often-dazzling effect. Fat Rice’s best dishes should be shared, including a curry-drenched Portuguese chicken with chorizo and cabbage as well as a pork belly that redefines sweet-and-sour with pineapple and tamarind. The pricey Arroz Gordo reinterprets paella by smothering baked jasmine rice with raisins, chicken fat croutons, and a jaw-dropping array of meats and seafood, such as linguiça sausage, salted duck, prawns, and char siu pork. The cream cheese serradura dessert may be the best play on a deconstructed cheesecake around.
