Franco Gianni and chef Ashlee Aubin play with—and elevate—Spanish cuisine along restaurant-rich Randolph Street, and the results fit in perfectly with Blackbird and Avec. Aubin’s intricate, modern compositions—exemplified by wonderful grilled octopus with puffed quinoa, pickled mustard seeds, and clouds of smoked salt cod espuma—stack up well with simple standouts, such as an intense sherry-cured Spanish mackerel finished on the plancha. Genial servers in the dining room and in the bar, which boasts an impressive pintxos menu.
