If ever there was an example of knowing one’s customers, Rob and Allie Levitt’s decision to leave Mado and open a butcher shop/café is it. The couple garnered their fanatical following less for Mado than for the snout-to-tail-to-table-to-mouth ethos they embodied in the backroom, and at their new 12-seat BYO in Noble Square, they’ll give the people what they want. Rob will have more space to indulge his love for butchering local farm animals, which will be available in the form of pâté, pastrami, pork belly, and pig sandwiches. The Levitts also plan to hook up with chef buddies for some of the daily meat specials. “We want to see how different chefs would approach different animals and different cuts,” says Rob.
