Michael Nagrant: What will set your menu apart from a typical brasserie?
Bob Djahanguiri: I like unusual restaurants. I’m trying to talk Roland into doing some unusual foods like tripe, sweetbreads. We’re trying to do that Monday night, because most chefs are off on Monday night. I think they’re all gonna be here!
