Nella Grassano takes thin-crust pizzamaking to the next level

Thin-crust pizzamakers in Chicago keep taking it to the next level. On the heels of Great Lake’s coronation in the pages of GQ, and Parkers’ Restaurant & Bar in Downers Grove earning its coveted VPN membership from the Neapolitan pizza police, everyone’s expecting Nella Grassano (Spacca Napoli’s original pizzaiolo) to top them all. In mid-October, Grassano—a Naples native—will unveil Nella Pizzeria Napoletana, with its 1,200-degree wood-burning oven, and fulfill her birthright. “Her brothers are pizzamakers, her father’s a pizzamaker, her grandfather is a pizzamaker,” says Scott Harris (Mia Francesca), her partner. “She’s got recipes going way back.” Wow, talk about heat. 2423 N.
