Michael Nagrant: Sepia feels like a timeless restaurant. Was that your goal?

Emmanuel Nony: We have the eye on the past with Sepia but we also look forward. People want to live healthier, so you won’t see a lot of the butter and cream. The same with the design. The exposed brick, the building from 1890. It’s timeless.
