John McLean spent 25 years with Levy Restaurants, where he oversaw multiple locations as calmly as we channel-surf. Now, on his own, McLean still thrives on multitasking. Hence, he’s opening two side-by-side spots at one time, and he’s playing it smart with burgers and pizzas. The burgers at the “absolutely urban-looking” UBB will be char-grilled half-pounders and come with fancy-pants toppings like onion jam, mushroom compotes, and tomato chutneys. In the smaller, cozier Sono—wait for it—Neapolitan-style pizzas. And McLean’s goal is to have 10 to 15 more restaurants in five years’ time. Old habits die hard. Urban Burger Bar, 1578 N.
