Carol’s Pub’s 45-year run came to an abrupt end in 2016 (due to pesky tax issues), devastating honky-tonk fans. But just before Christmas last year, Ed Warm, who bought the Uptown space, threw open the doors once again after fixing the crumbling Clark Street façade and putting in picture windows so light could stream in. He also updated the kitchen, which now turns out a delicious burger slathered with Merkts cheddar and a fried bologna sandwich. The drink list even has a watermelon margarita with cold-pressed watermelon juice and fresh-squeezed lime, though you can still get a $3 Old Style. No, it’s not the same old Carol’s. It’s better.
