After 15 years at Lettuce Entertain You Enterprises’ Ben Pao, Ed Culleeney had mastered Chinese cuisine—at least enough to impress Shawn Li, chef/owner of TL’s Four Seasons in Bartlett and a native of Sichuan Province. The cooks started swapping notes and soon were partnering on PL8 (pronounced “plate”), where they are serving generations-old Sichuan specialties, such as Chong Ching, a soup that balances red chilies and pickled mustard greens with simmered whitefish fillets.
