Perplexingly, an overcooked and underseasoned bone-in New York strip is the meal’s weakest link. It’s hard to imagine this unremarkable specimen coming from an onsite dry-aging room— especially with the rest of the experience so exquisite. When Chicago Cut is on, steaks are lights out. If the three-year-old suit magnet could deliver more reliably, it would rank higher on this list.
