The CHF can be a tough ticket, but they're nice enough to publish a lot of videos. Their session with Grant Achatz is really interesting, as you'd probably guess. My favorite part? When Achatz talks about the next wave in cuisine: "participatory theater. We've been doing that, but taking it a step further, trying to involve more artistic elements, more emotional elements. And people will [dramatic pause] not like it. But that's okay with me." (I dunno if people won't like it; Tony and Tina's Wedding has been running for almost a quarter-century now. And what is The Weiner Circle if not hot dogs plus dramatic cultural tension?)
