Wicker Park will get a taste of Greece come October, when the group behind fast-casual mini-chain GRK Greek Kitchen will open DOX Quality Greek (1566 N. Damen Ave., no phone yet). The counter-service spot specializing in chef-driven Greek street fare will open in the former City Soles space.
DOX is short for “doxa” in Greek, which means pride.
GRK Kitchen tapped Athens, Greece-born Christos Fasseas (the Fat Duck, U.K. Bikini Cocktails & Snacks, Greece) as executive chef/partner, overseeing the menu of made-to-order appetizers, salads, skewers, sandwiches, and Greek desserts.
“It’s not a big menu, but will cover a lot of tastes,” says Fasseas.
Shareable starters will include grilled Halloumi cheese and cherry tomatoes with ouzo dressing and grilled octopus with fava bean purée and caramelized onions. A five-foot grill will char up chicken, pork, and vegetables for à la carte kebab skewers. Said grilled meat and veggies, along with braised lamb, will also be offered in mini pita sandwiches, “like Greek tacos,” Fasseas says.
A rotisserie machine will turn out juicy chicken in quarter, half, or whole pieces. For dessert, mini Greek doughnuts will be fried to order and drizzled with a choice of honey and walnuts or Nutella and pistachios. Greek yogurt will get topped with honeycomb candy or seasonal fruit.
Check averages will run $12 to $15 without a drink, Fasseas says. “We are not getting any cheap ingredients—only healthy, organic, and grass-fed ingredients.”
Speaking of drinks, those will range from Greek wines to craft beer and cocktails, both on draft. The 1,800-square-foot space will seat 50, and will exude a Greek Islands feel, bolstered by wicker stools, long wooden communal tables, burlap-clad ceilings, and a Mediterranean-blue color scheme.
