If you look around the Boonie’s dining room, you’ll see servers carrying plate after plate of Joe Fontelera’s hash. As the dish passes you, not only can you hear it sizzle on its cast-iron dish, you’ll get a whiff of the nubs of pork belly, beef, and chicken livers mixed with onions and crowned with a fried egg, cilantro, and special sauce. If your table is the lucky recipient, the server will mix it all together. Scoop it onto your plate over garlic butter rice — it’s a knockout bite. $12. 4337 N. Western Ave., North Center
