There are many good things to eat on Erick Williams’s Big Easy–inspired menu, from seafood gumbo to boudin balls. But the stealth MVP is surely this sandwich, where he lets his chef’s instincts take over. Instead of the typical garnishes served on his other po’ boys (mayo, pickles), here he pairs crisp, meaty catfish fillets with rémoulade sauce and a kicky Cajun slaw.
