GT Prime, the much-anticipated steakhouse opening this month in River North, will feature prime aged beef and seafood options such as whole branzino. But according to the partners—Kevin Boehm, Rob Katz, and executive chef Giuseppe Tentori—that’s where the similarity to other Chicago meat palaces ends.

The 130-seat restaurant, they say, will be a game changer. The reason can be summed up in three oft-heard words: “shareable small plates.” Beef, bison, and venison will come sliced in four- or eight-ounce portions. If you must have a big plate, just order the carnivore platter—it’s got the whole assortment.
