The goat-whisperers at this family-run birria spot, which recently added an Uptown location, butcher the animals in house, then steam the meat, marinate it in mole, and finish by roasting it. The result is meltingly tender birria that’s available in all kinds of formats. You can order plates of birria with tortillas and consommé, cilantro, onion, and lime to make your own tacos, or get it served in a bowl with extra rich, delicious consommé (perfect if you’re fighting a cold). All are classic, but perhaps our favorite is the quesabirria combo, two quesadillas loaded with meat, melty Chihuahua and mozzarella cheeses, and consommé for dunking. One bite and you’ll see why this place is the GOAT.
