Size
Perfect mouthful, rice and fish in balance Generous cuts of fish Careful one-bite constructions Nice cuts over tiny pads of rice
Rice
On the sweet side Verging on mushy A balance of sweetness and tang, great fall-apart texture Good flavor and texture, just not enough of it
Overall
Not great. The yellowtail tasted sour, the fluke was nearly flavorless, and the eel was too lightly dressed and not warmed. Mostly solid. The yellowtail was clean-tasting and the sea bream was lightly sweet, but the eel was a bit overdressed with overly sweet tare sauce. Best in show. The yellowtail was buttery, the sea bream was sweet with a firm texture, and the eel had a well-caramelized skin. A mixed bag. The yellowtail was dry and falling apart and the sea bream had an unexpected mealy texture, but the eel was spot on.
