In Mexico, it’s not uncommon to find a convenience store that has set up a few tables for folks who want to sit down for a quick plate of tacos. Before long the taqueria overtakes the store, and the shelving gets pushed aside. This always busy restaurant operates in just such a space, its tables having overtaken the front room and its racks of salty snacks and household essentials relegated to the periphery. The kitchen here pumps out a good 25 kinds of tacos designed to hit every conceivable spot. The crispy tripas tacos are justifiably famous, but the vegan cauliflower ones deserve their own cheering section. I went with a couple of friends recently and tried a dozen different types — including chorizo, eggplant, suadero, al pastor, and sweetbreads — and we couldn’t pick a favorite. OK, maybe the pliant taco de canasta filled with chicharrones was mine.
